Recipe of the Week
"Roast Pork with Apples and Pears"
from "Notes from a Maine Kitchen" by Kathy Gunst

Preheat oven to 400 degrees

Spread the oil along the bottom of medium-size roasting pan or ovenproof skillet. Place the apple and pear slices on top and season with the salt and pepper, and half the sage, ghyme, and rosemary. Place the pork chops on top of the fruit, sprinkle with salt, pepper, and the remaining herbs. Pour the cider on top. Place on the middle shelf and roast for 15 minutes. Baste the pork with the cider, adding more if it seems like the pan is drying out at all. Roast for 5-10 additional minutes, or until the internal temperature reached 150 degrees. The apples and pears should be broken down and soft. Remove from the oven and cover loosely with foil, the temperature will rise to 155 degrees. Serve the chops hot with the apple-pear sauce and any juices poured on top.

tart apples, peeled, cored and cut into thin slices

ripe pears, peeled, cored, and cut into thin slices
Salt & freshly ground pepper

tblsp. Chopped fresh sage

tblsp. Chopped fresh rosemary

Pork rib chops, about ¾ to 1" thick or a pork roast
½ cup apple cider with no preservatives
